Every coin flip is an independent event with exactly two possible outcomes, each with a probability of 0.5, or 50%. "Independent" means that the coin has no memory — the outcome of one flip has zero effect on the next. Even if you flip five heads in a row, the very next flip is still exactly 50/50, not "due" to land on tails.

This independence is also why 10 flips won't always split evenly into 5 heads and 5 tails. What's the probability of flipping heads 5 times in a row?

Because each flip is independent, you multiply the probability of each individual flip together: 0.5 × 0.5 × 0.5 × 0.5 × 0.5 = 0.5⁵ = 1/32, or about 3.1%. That's rare, but it's not nearly as rare as many people assume — if you flip 10 coins simultaneously, you'd expect a run like that to show up in a small fraction of your trials.
